At Barefoot Skincare, we don’t just use tallow — we honour it.
Every batch begins with certified organic, pasture-raised and pasture-finished suet, sourced with the same care you’d use when choosing food for your family. From there, it goes through a slow, four-day process that we’ve refined to produce the cleanest, creamiest, most neutral-smelling tallow possible.
Here’s exactly how we do it.
Step 1 — Day 1: The Wet Render (The Cleanest Start Possible)
We begin by grinding 80kg of raw suet through our commercial, food-grade meat mincer. This creates small, even pieces that melt gently — without ever scorching. We then load two 60L stainless steel pots with the ground suet, placing 3 litres of water and a stainless steel trivet at the bottom to prevent scorching, before slow-simmering until everything melts down gently.
The moment it’s melted, we strain the hot tallow through a chemical free cotton cloth into stainless steel pots and pour it into food-grade stainless steel gastronorm trays to set overnight.
This first render removes over 95% of impurities — quickly, cleanly, and without cooking any “beefy” aromas into the fat.
Once emptied, we hand-scrub our 60L pots so they’re spotless and ready for the next day.
Step 2 — Day 2: The Second Render (Ultra-Pure Tallow Begins Here)
In the morning, we remove the set slabs from the trays, drain off the water from the first render, and scrape away any impurities that collected at the bottom.
We pat the tallow completely dry, cut it into pieces, and melt it again — slow and gentle.
After re-melting, we strain it again through cotton cloth. At this point, we’ve eliminated around 99% of impurities.
We wash the gastronorms twice in the commercial dishwasher before pouring the tallow back in to set overnight.
Step 3 — Day 3: The Final Moisture Removal (Low & Slow)
Now that the tallow is extremely clean, we remove the slabs, scrape off any remaining specks, pat away every trace of moisture, and chop them into smaller pieces.
This third render is done at low, slow temperatures, watching carefully until the very last bit of water gently evaporates.
We strain through cotton once more and let it set overnight again.
This step gives us the smooth, neutral, beautifully clean tallow we’re known for.
Step 4 — Day 4: The Final Polish (Perfection Only)
Our tallow is now ready — but we don’t stop there.
We render it one more time, low and slow, to be 100% certain it’s completely clean, water-free, silky, and scent-neutral.
After one final strain, we pour it into large stainless steel gastronorm trays, where it sets before being stored with stainless steel lids — never plastic.
It’s more time-consuming.
It’s more expensive.
But it’s the right way.
